Trout are demanding in terms of environment, preferring water that is fresh, clean and well-oxygenated. Italy is one of the world’s biggest producers of trout, a freshwater fish with excellent nutritional properties.
Trout, members of the Salmonidae family, are found throughout the northern hemisphere from the temperate zones to the coldest regions. Demanding in terms of environment, they prefer fresh, clean and well-oxygenated water. As a result one can be certain that the environment in which they live and reproduce is clean and pollution-free.
Rainbow trout are the most commonly farmed in Italy and they prefer cold, highly oxygenated and very pure water. Originally from North America, they were introduced to the country at the end of the 19th century. Known as rainbow for its rich colors, it is ideal for farming because of its growth capacity and adaptability to the environment.
It’s a little-known fact that out of all farmed fish the trout is the only carnivore. With a rich flavor as well as excellent nutritional properties, the flesh contains many omega-3 fatty acids and is rich in vitamins A and D. It also has a high level of water-soluble B12 vitamins and pyridoxine.
