Cheese is a complete food, rich in proteins and minerals (in particular phosphorus and calcium), with a high concentration of vitamin D. These characteristics means it helps promote growth in adolescence and the maintenance and protection of adult bodies.
It is rich in fat and therefore has a high caloric value; for this reason it is often banned from diets thanks to a mistrust of all high-fat foods. Incidentally fat is essential to a balanced diet. An example of the importance of cheese can be seen in France, where per capita consumption is very high and the rate of deaths from heart disease very low.
